Healthy Homemade Meals ROCK!
Tonight I made a new casserole dish that I've never tried before for my family...and they not only LOVED it but also it was healthy!! Casseroles are my favorite dinners to make because they're easy and all you have to do is through in all the ingridients into a casserole dish and let the oven cook the rest! Here's what I created with random food items I had:
Homemade Mac 'N' Cheese Casserole:
Pan #1 - Cook the noodles
Pan #2 - Cook some ground beef
- After I cooked the noodles I let then drain in a collander and used the same pan/burner to just throw in some veggies (ok I used ALOT of veggies lol!) and warmed them up on the stove.
- After the meat is cooked, noodles are drained and veggies are warm...throw everything into a casserole dish and add half a chunk of MELTED Velveeta Cheese dip. I added about 1/4 cup of milk to add more texture :)
- Before I stuck this into the oven, I graded some cheese on top (which my fam loved!)
- Stick the casserole (uncovered) into the oven on 425* and let cook for about 45 - 60 minutes...Depending on how brown you want it :)

Work Life with Home Business Life

Ok....First of all, I decided to make a post about this because I
would love to read someone elses if I could find more! :) So, here
goes mine!! ~~~~~~~~

Ok so I'm not perfect, I get stressed easily. Yes, that's my flaw lol!
I work full time in a semi-stressful job that is 30miles from my home. I have 3 stepkids, a husband, own my own home, a cat named YoYo and 2 bunnies. I have a full time job and a full time home life. I have my own online business that I run on a daily basis (as much as I can at least! Those sick days do get in there, along with PTC's and school plays!). My day to day routine is a drag sometimes, and I know when I'm at my limit. I get up every morning between 5:45am and 6:00am. Get dressed and ready for work then leave for work at 6:30am. I arrive at work (after my Dutch Bros. ritual!) at 7:00 and clock in. I work until 3:30 (depending on if I'm boggled down with too muh work that day) and get home around 4:00pm. (30min drive home). I then pick up the kids and come home to clean/straighten up the house. After about 1 hour of cleaning it's around 5:30pm and I can get started for dinner. I set my 3 year old up on the counter to watch him do a homework page of his colors/numbers while I cook. Great bonding time :) I finish dinner and set the table to eat by 6:30pm. After chatting up about everyone's day and eating a healthy meal, we all clean off the table and watch an episode of The Simpsons. 8:00 to 8:30pm has been their bedtime. Where I will change diapers and brush teeth as needed. Tuck them in. By this time in the evening it's either 8:30pm or 9:00pm and this is my "Personal" time to work on my home business/etsy shop. I work on a computer at my FT job, so it takes alot of willpower to get on the computer AGAIN at night to promote my shop, etc. I have to disciplin myself greatly every evening because by 9:00pm I am either wiped out, exhausted, or already asleep LOL!! This is my daily routine M-F.
